Hydrating Watermelon Salad

INGREDIENTS: 

 

1 small/medium watermelon (~8-10 lbs)

1 medium cucumber

1 ½ cups feta cheese, crumbled

1 Tbsp olive oil

1 Tbsp balsamic vinegar

2 Tbsp lemon juice

1 Tbsp lemon zest

1 cup fresh mint, finely chopped

Sea Salt & pepper to taste

  • Cut the rind from watermelon and slice melon into bite sized chunks (~1 inch), deseeding as you go

  • Place melon into a colander to drain excess liquid

  • Peel the cucumber and chop into thin, bite sized pieces

  • In a small bowl, whisk together the oil, vinegar, juice, zest, salt and pepper

  • Combine the watermelon, cucumber, feta in a large bowl and toss with the oil mixture till coated evenly
