Treetop’s Summer Salad
INGREDIENTS:
1 large english cucumber, sliced and quartered (keep the skins for the fiber!)
2 cups cherry tomatoes, halved (or other fresh tomatoes of choice)
1 cup cooked chickpeas (if canned, rinse and drain)
1 cup cooked black beans (if canned, rinse and drain)
½ medium, red onion, sliced
2 avocados, diced
1 cup cilantro, chopped
¼ cup olive oil
2 Tbsp lime juice
1 Tbsp lime zest
1 ½ tsp sea salt
1 tsp black pepper
Combine the cucumber, tomatoes, chickpeas, black beans and onion in a large bowl
In a small bowl, mix together the olive oil, lime juice, zest, salt and pepper
Pour over tomato mixture and toss to coat evenly
Add avocado and cilantro and toss lightly to combine
